Wai says here that ginger (as well as other spices) can contain small amounts of safrole and it is on this basis that they should be excluded from diet. I love ginger and this article suggests that safrole can be almost eliminated through sun-drying. I live in a hot climate so how adverse do you think the effects of ginger that has been sun-dried for awhile would be?

Personally I think it's fine to eat a bit of ginger if you like it that much. Only if you're on the Acne Sample Diet, or acne-prone, you should really avoid it (and other spices).

That's good to hear. I like ginger and also eat a bit of 100% chocolate (dried cacao paste) for the mortality bonus. Obviously can't be reasonably extrapolated, but the oldest person ever verified reportedly ate 1kg of chocolate per week.

Yep, just ground beans and water. It has little taste on its own but is amazing shaved onto grapefruit or other citrus.
