I'd like to make an OJ OO emulsification

What oil? Which vinegar? What about sugar?

I'd like to make an OJ OO emulsification

Post by johndela1 »

I'm thinking it would be nice if we could create a recipe to make an OJ OO emulsification.

Any ideas on a wai friendly emulsifier we can use to get olive oil to mix with OJ instead of sitting on top? Sometimes for a special treat I'll use cream in my OJ. The cream mixes with the juice and does not sit on top and as most know egg yolks mix well with OJ. This makes me wonder how we could get OO to do the same.

In my opinion, just shaking the bottle does the trick.

I just discovered that if I juice a banana with my OJ, shaking the juice can emulsify *way* more oil and keep it emulsified. I can make 800ml juice using 6 oranges and 1 banana, and then add 200ml OO, and when it's emulsified with banana it tastes great!

I think pulp also makes emulsification easier, but the downside is that your getting more fiber.

I also know that using a straw helps you get the oil more gradually. If you just have a glass or bottle and drink it from the top (and it's not emulsified) then you can get a mouthful of OO, but using a straw helps regulate it.

Best option for me though is banana.
